Lemon Bars
Ingredients
Pie Crust
- 400g all purpose flour
- 200g butter
- 50g sugar (optional)
- 1/2 tablespoon salt
- 2 tablespoons water
Lemon Bar Mixture
- 2 cups of granulated sugar
- 1 cup lemon juice
- 4 whole eggs
- 1 tablespoon flour
Directions
For lemon bar mixture:

Whisk together all the ingredients until the sugar dissolved.
For pie crust:
- Sift the flour into a large bowl, add the butter (cut into small cobe) and rub in with your fingertips until the mixture resembles fine breadcrumbs.
- Stir in the salt and sugar(option) then add 2 tbsp water and mix to a firm dough.
- Knead the dough briefly and press on the baking tin (9” x 15”) and bake in the hot oven (350°F) for 15 minute, take out from the oven and pour over the lemon bar mixture on the pie crust and continue bake until cooked (45minute)
